or
4 boxes of toquitos (like flautas)
or
Chicken Alfredo (do the math)
or (and my personal favorite)
Order Chinese (sweet and sour chicken is always good) and about 30 egg rolls with 10 sides of won tons.

Chicken on a bun and a side Caesar Salad
The salad can be readied ahead and held in large bags.
Dressing for salad can be put in jars and held until served on salad.
This bun would be Italian Buns or Kaiser buns
The chicken would be prepared ahead and refrigerated
The chicken would be breaded and seasoned and fried or baked.
The sauce for the buns and chicken would be a tomato
and sweet peppers with Parmesan cheese mixed in it and also seasoned more towards an Italian sauce prepared ahead and heated at lunchtime. Preparation ahead makes the serving for 30 less stressful.
I am also giving you an alternative by serving smoked salmon and cream cheese on mini crackers and or bagels
with three different salads of your own choice.

Jambalaya. It is a rice dish with shrimp, chicken, sausage, and other stuff that is easy to make a huge bucket of and it is easy to serve. You just need plates and forks.

for 30 i would go with finger foods sandwiches meat and veggie trays prob cheaper and alot easier for sure

Make cream puffs and fill them with different salads (i.e. tuna salad, chicken salad).
