Regular sherry would be better. A great substitue would be beef broth, just like chicken stock or broth is a good substitute for white wine, as is vermouth. Cooking sherry has too much added sodium and is really not recommended by chefs, however if you are a home cook such as myself, go ahead and try it. If you don't like it, get rid of the cooking sherry.

I was once told by a wine expert never to use cooking wine when cooking. It is full of salt and loses so much flavor because of it. He said to always cook with drinking wine. So, in my opinion, you're better off using the wine you have! Red or white, both will be good. I would go with the white though.

Pitch that "cooking" sherry and just sub beef stock or broth (or bouillion cubes and the appropriate quantity of hot waterr).

I cook extensively and Always MODIFY "Others" recipes by EXPERIMENTING!

That is HOW one becomes A Great Cook!
