A nice sparkling Rosee would be a good accompaniment.
A tossed salad is an easy side.
I like a Mandarin Salad with fish.
Bye the way the meal sounds great.
Mandarin Salad
A slightly sweet dressing with the crunchiness of almonds makes this an outstanding salad!
Dressing
1/2 cup vegetable oil
1/4 cup vinegar
1/4 cup sugar
1 teaspoon salt
1/4 teaspoon Tobasco sauce. This ing. is important
1 cup sliced almonds
1 head iceberg lettuce
1 head romaine lettuce
2 cups chopped celery
2 (11 ounce) cans mandarin oranges, drained
1 cup thinly sliced red onions
1/2 cup bacon bits real or artificial
Shake 1st 6 dressing ingredients in a jar and refrigerate.
Just before serving, put chopped lettuces in a large bowl.
Add celery, oranges, onions and sliced almonds.& bacon bits.
Shake dressing well and pour over salad.
Toss to mix and coat.
I suggest to make the dressing as is but half the amount of salad ingredients since there are only two of you.

Red wine is ok w/ Tuna. It can handle the boldness of flavor. But white is ok too.

I think I'd simply bake a couple potatoes and serve them w/ an assortment of toppings. Tuna, potato, asparagus! Done! For color, you may want to toss in some carrot chunks w/ the asparagus, and/or maybe a few slivers of yellow bellpepper.

I would do a side of wild rice, for taste, color and texture.
Otherwise, a side of saffron rice would be delicious, and a little lighter than the wild rice.
Or just do an endive or frisee salad, that would be lovely!
And I would do a white wine, although a light red would be fine, too.

Well, broccoli in a butter/garlic sauce would go nice but since you've already got a green veggie and that is in garlic that might not be the best. Maybe some tomatoes with Mozzarella.

I suppose he's into this sort of thing or you wouldn't be preparing it. (lucky guy). How about a red potato vinegarette salad. Might want to consider a different green - asparagus makes your pee stink - this may or may not be a factor as the night progresses.
