I have some leftover ham from dinner the other night and I would just hate to throw it away. Does anyone have a quick and easy recipe? Maybe for a soup, since it is rainy and cold in my neck of the woods. Any suggestions are appreciated.

p.s. I want to use the ham tonight.

Im fresh out of soup recipes, but one thing I made with my leftover ham was ham/potato hash that turned out raelly good. Just fry up some potatoes to your desired doneness and add ham, and maybe some onion and bell pepper. Fry until perfectly brown and delicious. Top with some fried eggs.

How about some good old fashioned split pea or lentil soup with ham? You can go the very easy route by purchasing already made split pea or lentil, or you can make your own by cleaning a bag of lentils (or peas) and putting them into a sauce pan with 6 cups of chicken broth, 1 onion, diced, 1 carrot, diced, and 1 stalk of celery diced. Bring to a boil and simmer. Add your chopped up ham and 1 Tsp thyme and simmer until lentils or peas are tender and the soup has thickened. Add salt and pepper to taste. If you prefer more veges, then chop those up and add during the cooking process. Serve with a green salad and warm bread!

Smoky Corn and Potato Chowder
1-1/2 cups milk
1 (14-3/4oz) can cream style corn
1 cup cubed ham
2 cups cubed cooked potatoes
1 (15-1/4oz) kernel corn, drained
1 cup shredded smoked cheddar, swiss or gouda cheese
green onion chopped
Stir milk into cream corn in a large sauce pan. Add ham, potatoes and kernel corn. Heat through, stirring occasionally; Remove from heat; stir in cheese until melted; sprinkle with green onion.
This is really yummy; I usally have to double this reciepe since I have a family of 5 which include two hungry boys.

If you all have tons of ham leftover from Easter, here is a great recipe to use some of it up. I made this last week and it is very good.
Enjoy!
Pasta and Ham Salad
8 oz. pasta shells, cooked, drained
1-1/2 cups cooked ham, chopped
1/2 cup green bell pepper, chopped
1/2 cup celery, sliced
1/2 cup radishes, sliced
1/4 cup green onions, chopped
1/2 cup reduced fat mayonnaise OR Miracle Whip salad dressing
1/2 cup plain yogurt or sour cream
2 tsp. Dijon mustard
1 clove garlic, crushed
1 tsp. chopped chives
1 tsp. tarragon vinegar or cider vinegar
1/4 tsp. salt
Combine pasta, ham, bell pepper, celery, radishes and green onions in a large bowl.
Combine mayonnaise, yogurt, mustard, garlic, chives, vinegar and salt in a blender.
Process until well blended.
Pour dressing over salad. Toss gently to combine. Chill until serving time.
Serves: 4.
