Elton Brown on "Good Eats" was talking about making a mushroom puree just yesterday. He said that mushrooms were mostly water and he was really cooking them down to get the water out. They also act as little sponges and absorb any liquid that they're put in.

About 2/3 to 3/4 of mushrooms are composed of liquid......so, a pound of mushrooms (16 oz, prior to cooking) results in about 6 oz after cooking and evaporating all the liquid that comes out of them.....Enjoy!!!

Depends how long you cook it for? Mushrooms need only short cooking over high heat, because long cooking or cooking at low temperatures causes them to lose moisture and shrink.
