A very good question.
I guess if you are visited by a holy Mary tortilla, you can just feel it. It must be one of those things believers "just know" because they are believers.
My favorite was the virgin Mary pizza pan. The stain under the overpass was a close second.

This is the funniest subject. It's even funnier that people actually go pray over these objects. 2000 years ago, Jesus was supposed to be performing miracles like raising the dead and curing the blind. These days, it's imposing his picture on a tortilla chip. It's a MIRACLE!!!

They don't know. They see a shape that resembles a male or female face and they immediately just decide it must be Jesus or Mary. No one knows what they looked like, but people who see things like this are willing and ready to believe anything.

Oh don't those just crack you up?! You are so right. No one knows really what Jesus or Mary looked like. But I guess you just go by whether they look like the common depictions of them.
Hey, my Dad was popping popcorn one day, and there was this little puppy-shaped popcorn. We kept him and call him Popsy. You'd be amazed, really. He has his paws up like he's asking for a treat, and a little tail, one of his ears is folded over, and my Dad put eyes on him.

If it looks EXACTLY like all the images of Thetis weeping over Achilles, it's Mary.
If it looks like actual Jews, it's not holy.

I always wondered that myself, since all we see are basically artist's renderings of what someone thought they must have looked like... Too bad they didn't think to have a Holy Portrait Artist follow them around.
