I can't find the exact verse...

In 1 Corinthians 14 (I think) it talks about "Christ's Body" (the Church), of which He is the head... that would imply that we are his hands and his feet.

Their were strict guidelines for choosing bible cannon. Most specifically, New testament books were required to be written by eye witnesses to the events, or by people who were contemporaries (lived during the lifetime of) Jesus and/or the 12 apostles. The so-called "gospel" of Thomas was not written by Thomas. It was written approximately 2 centuries after the life of Jesus. As such, it does not meet the most basic criteria for canonical selection, because it wasn't written by someone was around during the appropriate time period, and therefore could not possibly have had first hand knowledge of its subject matter.

I don't believe there is one exact verse. The idea comes from the I Corinthians 12, which talks about believers all being part of the body of Christ. It refers to "the foot," "the ear," "the eye."--by extension we can be "hands" or be "feet."

John 20:28

Where Thomas confirms the Deity of Christ by saying "My Lord and My God"

This is after Jesus' resurrection

He tells Thomas to put his fingers in the wounds on His hands, feet & side

Perhaps you are thinking of 1Corinthians 12? It speaks of believers as being different parts of the "body" of Christ?
