I brown the chicken breasts in a little butter. Then I cover them with a jar of salsa and simmer 1/2 hour. (covered)turning occasionally. Then sprinkle with cheese, like mozarella or pepperjack. Let it melt and serve with buttered noodles.

I'll give you my simple go to recipe when I did no planning or shopping. My family actually loves it, even when I end up making it twice in a week!

You need only 4 things:
Boneless Chicken Breasts (thawed)
Italian Dressing
Ziploc bag (or container) Ziploc is better b/c you can trash it
oil or spray

put the chicken in the bag with enough dressing to soak in. Shake it up let it sit in the fridge for an hour or so. Lightly oil a pan and fry the chicken turning only once or better yet use a George Foreman grill it's faster. Cook til no pink is left.

Serve over a bed of rice pilaf or white rice. Maybe a bag of salad with Italian Dressing and Voila... you made a meal!!!

This is a play off of Geegees that I do. Use a pack or two of Ramen for the noodles depending on how many people you are feeding. Cook the chicken after cutting it into chunks with some soy sauce and cook some veggies with the chicken after the chicken is no longer pink. The veggies will be crisper and closer to raw this way and they taste a lot better in my opinion. Then just serve it on top of the ramen noodles.

I make a simple chix francese.

Make an egg wash with milk and parmesean cheese, dip chicken cutletlets in wash ( I usually thin my cutlets out by slicing or pounding)
After dipping dredge in flour
Cook in olive oil until done

Make a quick sauce:
Melt whipped butter in a sauce pan, add garlic powder, and lemon juice ( no too much, 1/2t)

Before serving cutlets brush sauce on both sides and serve.

Taste very good for a quick meal

Alla pizzaiola:

You may want to slice each half of the chicken breast in half cutting it the long way so it cooks quicker.

Cook the chicken breasts in a pan with a little olive oil, garlic if you like it, salt and pepper to taste. When they are almost done add tomato sauce, I prefer the chunky type. Add a small handful of oregano crushing it between your hands as you add it. Cook 3-4 minutes, taste the sauce and add salt and pepper as needed, and serve.

It's quick and we like it.

how about a stir fry with some fresh, frozen, or even canned veggies, sauteed in a little pam spray with some spices? You can serve it with rice or any kind of noodle mix.
Or if you have any canned, creamed mushroom soup, or anything like that, there are often recipes for a simple casserole on the back.
