Some of the spices previously mentioned will leave your soup with an ethnic taste (such as the curry). In making good old American chicken soup, I usually put in onions (if that counts as a spice), garlic--not a lot, you don't want to overpower it, and parsley.

For a classic chicken & rice soup, go with some dried thyme,a bay leaf or two, salt(adjusted depending on what kind of chicken stock you're using), and fresh ground pepper.

The simpler the better. Let the full flavor of the chicken and veggies do the talking. Add a bit of salt, and maybe some seasonall.

That sounds so delicious!
I've made that a time or two before. I used rosemary, a bit of oregano, and basil. Sometimes I added a little tarragon too.

garlic is always my first choice then I would go with thyme and basil and if you like it spicy use just a little curry or cumin
