french fries of course, if it's fried cod. if it's fried cat fish, i love potato salad, corn bread, greens ... anything soul food.

Kibbeling which is a white fish that you can find at street fish stands in the Netherlands. I particularly like the sauce that comes with the fish. Normally, I get one of these to go and eat while walking around town, so there are no side dishes.

Depends on the fish. Salmon I like the fish in aluminum foil with a bed of split leeks, crumbled butter crackers (Town House) light sprinkling of paprika with a liberal splash of a good white wine. Seal it and cook for about 12-15 mins. Side dish is steamed root veggies with Vigo Seasoning started before you do the fish. Wrap them also in aluminum foil also with a liberal splash of white wine and bake for 15 mins. for an aldente crunch.
Other side dishes, dirty rice, couscous, risotto, stewed tomatoes and seasoned croutons and the old standby macaroni and cheese.

I'm from Louisiana so fried fish is a staple food for us. Ok so french fries, rice, and redbeans are the most popular. Coleslaw sounds good as well.
