There are many different reasons. I did it mainly because I wanted to become a stronger Christian before going off to university. I chose the particular organisation and the programme because I'd been very impressed by the relationship with God cultivated by friends who had worked with this particular organisation, and also because the programme looked fun!

There are many different Christian agencies, with different focuses. Some emphasize preaching the gospel, bible translation etc, others emphasize development - providing food and water, education...

People have allsorts of motivations for working with them - some ppl feel specifically led by God, others want to use their particular area of expertise in a way that will benefit the poor, some want the experience (ie the opportunity to teach in a school...), or maybe they've been in a job for a while in Britain, and they want to do something completely different for a while to reassess where they should be going in life, others enjoy the opportunity to travel and live in a different culture, and others want to find a commited Christian to marry!

Because they feel that they could serve God by helping those who are less fortunate, desolate and ill. Just being kind and giving their time and talent to save lives that otherwise would be lost and without hope. Just like the mega-concert Live Aid did in 1985 to raise money for the starving and ill of African nations. They were not doing it under the guise of Christianity, but it could be defined as a Christian act.

they jump at the chance to brainwash little kids in third world countries, and pretend they're REALLY interested in giving a child a sandwich and clean clothes.

in fact, they want to convince them of their bible-cult and brainwash them. the christian childrens fund used to be the worst offender of this sort of thing, until they got caught and called out for it. they were refusing aid to kids unless the kids would agree to bible classes all day -- THEN they would get food, clothes and medical aid.
