You could, but would you be better off if you put up a concrete backer board?

Fordman is right. If the slate is very thin, i.e. light in weight, drywall would probably hold it but if it is even a 3/8 of and inch thick the weight will accumulate quickly. Additionally the adhesion of mortar to drywall is iffy at best. If you can possibly do I strongly recommend the backer board designed for the purpose.
