I ran out of cream of chicken soup and want to make a chicken and rice casserole. I do not want to go out to get the soup as it is snowing and blowing pretty hard outside. Any suggestions? Thanks. :)

You can use cream or evaporated milk with chicken boullion, if you don't have boullion then salt to taste. if you have chicken broth simmer till it's reduced by half assuming you have 2 Cups to start and then add 1/4C cream or milk

Just make your own cream sauce by first melting 2 tablespoons of butter and stir in some chopped onions (opt), 2 tbls flour, stir together until pasty. Add 1 chicken bouillon cube or granules and either 1 cup of hot water or milk (I would use milk, half n half, evaporated milk etc.). Stir until thick adding salt, pepper and some chives and taste. Mix into casserole and use as you would the chicken cream soup.
You can also use mushroom soup or cream of celery soup.
The nice thing about making your own sauce/soup, is that you can add in what you want (mushrooms, onions, etc) and you can control the salt level. Canned soups are known for their high salt levels.
There ya go. Maybe you'll never buy a canned soup again!

Cream of celery or cream of mushroom soup would work well too. A jar of chicken gravy...Other than that, it's hard to say, since I don't know what's in your pantry or fridge. You could make your own white sauce with butter, flour and milk. Any good cookbook will have a basic recipe for that. Then you could season it many different ways, adding canned chicken broth, or a little wine or sherry. Chop up some celery and onion and saute that to add to the sauce. Or, you could forget the casserole idea, and just bake or fry the chicken. Cook the rice separately using chicken broth (if you have it) instead of water.

i just substituted with a can of chicken and dumplings soup. my recipe called for cream of chicken but all i had was the chicken and dumpling and it turned out very good. i have also used cream of celery and cream of mushroom in place of cream of chicken. all was good. i think any cream style soup will work. might even be better ya never know. good luck

Well if you have ANY soup it would be okay. . . . Like, cream of celery, cream of mushroom, etc. . . Otherwise, you could use some heavy cream, and then just flavor the whole thing up with spices, or even just some chicken stock.

Make a white sauce...if you have no milk, use broth or water.
If you use water, maybe you have some bullion to add to it.

Can thicken it with flour, or instant potato flakes, or tapioca, or corn starch, or whatever you have in the house that will thicken the sauce.

Or maybe you have a cream of celery soup, or cream of mushroom soup?

Check out the cupboard, you'll come up with something...good luck and good eating...

You can try sour cream or yogurt. Or sometimes you can add in cream cheese to these types of dishes. You'll get the cream effect from the soup and hopefully you're already adding chicken for the flavor.
