I use mashed potatoes (with a splash of milk) as a crust and pre-bake it for about 12 minutes with foil over it and beans inside the foil to keep it from bubbling up.

Here is a recipe that is a good one, easy and little experience required. I know that you will love it.

Impossible Bacon Quiche

12 slices bacon, crisply fried and crumbled
1 cup Bisquick baking mix
1 cup shredded natural Swiss cheese
1/3 cup chopped onion (I use about 3 green/spring onions, all of it)
1/8 teaspoon pepper
2 cups milk
4 eggs
¼ teaspoon salt
add mushrooms sauteed or canned, if desired

Heat oven to 400° F.
Grease 10-inch quiche dish or pie plate, 10-by-1½ inches.
Sprinkle bacon, cheese and onion in the plate. Beat remaining ingredients until smooth, 15 seconds in blender on high or 1 minute with hand beater.
Pour into plate. Bake until knife inserted between center and edge comes out clean, 35 to 40 minutes.
Cool 5 minutes.
Yield: 6 servings
Enjoy.

Shortcrust Pastry:
1 cup plain flour to 1/2 butter and 1 egg with a pinch of salt.

Place in food processor and use pulse button to just combine.

Roll out and blind bake for 5 minutes on 350 degrees F.

Remove paper and rice, and mix 4 eggs to 1 cup pouring cream, add your other ingredients (don't forget the cheese and a few herbs and bake until set (30-40 mins).

Pastry:
2 cups all-purpose flour, plus more for dusting
1 teaspoon salt
1/4 teaspoon sugar
3/4 cup (11/2 sticks) unsalted butter, cold and cut into small chunks
1 large egg yolk
3 tablespoons ice water, plus more if needed

To make the pastry: combine the flour, salt, and sugar in a large mixing bowl. Add the butter and mix with a pastry blender or your hands until the mixture resembles coarse crumbs. Beat the egg yolk and ice water in a small bowl to blend, add it to the pastry. Work it in to bind the dough until it holds together without being too wet or sticky. Squeeze a small amount together, if it is crumbly, add more ice water, 1 tablespoon at a time. Form the dough into a disk and wrap in plastic wrap; refrigerate for at least 30 minutes.

Good luck

A basic short crust pastry recipe can be found in any cook book. Blind bake the pastry case before adding the quiche mixture. Blandness can be avoided by adding flavour to the mixture that is salt, pepper, mustard powder.

I use ready made pie crust, it is easy, and nobody has ever known the difference! Also try quiche recipes on the web, for more ideas. Quiche Lorraine is a good one to try!
Just experiment, and have fun cooking your Quiche!

You could try adding fresh herbs to your pastry mix. If it's a cheese and caramelised onion quiche put some fresh sage in the base mix, lovely! chives are good too.
