does anyone have a healthy/low fat recipie for muffins? preferably chocolate but i dont no if thats possible

1 cup rolled oats (old fashioned oatmeal)
1 cup skim milk
1 cup whole wheat flour
1/2 cup brown sugar, packed
1/2 cup unsweetened applesauce
2 egg whites
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt


Soak oats in milk for 1 hour.
Combine all ingredients in a large bowl.
Spoon into a muffin pan that has been lightly greased or sprayed with nonstick spray.
Bake at 400 F for 20-25 minutes.
Variations: To make Oatmeal Raisin Muffins, Oatmeal Apple Muffins, or Oatmeal Chocolate Chip Muffins, add raisins/chopped apples/chocolate chips to the batter

Double Chocolate Muffins (low-fat):

Dry ingredients
1 1/4 cups whole wheat flour
1 cup unbleached white flour
1/2 cup sugar
6 tablespoons cocoa powder
1 1/4 teaspoons baking soda
1 teaspoon baking powder
1/4 teaspoon salt
1/3 cup milk chocolate chips
Wet ingredients
1 3/4 cups fat-free buttermilk
1/2 cup honey
1 large egg
1 1/2 teaspoons vanilla extract

1. Preheat the oven to 400.
2. Sift the dry ingredients together in a large bowl.
3. Add the chocolate chips and stir to combine.
4. Whisk the wet ingredients in a medium bowl.
5. Pour into the dry mixture.
6. Stir just until mixed.
7. Do not overstir.
8. Spoon the batter into a greased or papered muffin tin.
9. Fill each cup nearly to the top.
10. Bake for 15 to 20 minutes.
11. Cool the muffins at least 10 minutes before removing from the tin.

Ginger Bran Muffins

6 Muffins
This old-fashioned recipe makes a muffin batter that can be kept in the refrigerator so you can make 1 or 2 muffins at a time. Or you can make them all at once and freeze them. They thaw in just a few minutes if left on the kitchen counter.

Ingredients:
3/4 cup bran cereal (not flakes)
1/4 cup boiling water
2 tbsp olive oil or canola oil
1 tbsp sugar
1 egg
1/2 cup buttermilk
1 tbsp grated fresh ginger
2 tbsp raisins or other chopped dried fruit
1/2 cup unbleached flour
1 tsp baking soda

Instructions:
Pour boiling water over the bran cereal in a mixing bowl. Stir

to mix and let stand 5 minutes. Add the oil, sugar, egg, buttermilk, grated ginger and raisins to the bran and mix well. In a small bowl, mix together the flour and baking soda. Stir into the bran mixture and mix well. The batter can be kept tightly covered in the refrigerator for about a week.

To bake, preheat the oven to 400 degrees. Lightly oil a muffin tin if you are making all 6 muffins or place a foil muffin cup in a custard cup if you are baking just one muffin. Don't stir the batter if it has been keeping in the refrigerator. Fill the muffin tin or muffin cups 2/3 full of batter. Bake the muffins for 12 - 14 minutes or until the top springs lightly back to the touch.

Bake at 400° for 15-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack; dish with confectioners' sugar if desired. Yield: 1 dozen.

Cranberry Streusel Muffins:

2 tbs. packed brown sugar
1 tbs. Bisquik baking mix
1/3 c. lowfat milk
1 egg
1/2 c. whole berry cranberry sauce
2 c. Bisquik
2 tbs. granulated sugar

Heat oven to 400 degrees. Line muffin pan with paper liners, or grease bottoms only. Mix brown sugar and 1 tbs. Bisquik together and set aside.

Beat milk, egg, and cranberry sauce slightly. Stir in 2 c. of Bisquik and sugar, but stir just until moistened. Fill muffin cups half full. Sprinkle with brown sugar mixture.

Bake 18 minutes or until golden brown.
Makes 1 dozen

1 muffin:
120 calories
2.5 grams fat (saturated 1 gram)

I am also on diet and what I can eat (and am eating whenever I really really really crave sweets) is pudding. Low fat milk, sugar, pudding powder (cook for about 2 minutes). Some canned or fresh fruit. But be aware - you will crave sweets even more. Easier and better for you is to eat some fruit now and a lot of vegetables. After about 3-6 hours, the craving should stop and not return (until the next craving). I am usually craving pancakes with jam, but because of the fried part I can not have them. I hope your diet will bring the results and wish you good luck!
