I have some steak in the fridge marinating.. im going to make a salad with mixed greens, cucumber, red onion, bell pepper, and crutons and slice the steak with it.. have some crusty bread.. blue cheese or balsamic... not sure..

It's breakfast time, but I'm already thinking about it. I decided on a fettucine alfredo with mushrooms, and a mixed green salad.

We've eaten potatoes for 3 days straight now, gotta have something different.

Salsa Chicken. And here's the recipe:

2 chicken breasts (ours were flash frozen)
1 zucchini
Extra Virgin Olive Oil (EVOO)
1 can Campbell's Nacho cheese soup
1 c. salsa
1 box Mexican Rice-a-Roni

Place chicken breasts on large piece of foil. Surround with sliced zucchini. Drizzle EVOO over all. Close foil, forming a packet, and cook at 375 for 25 minutes.
Remove packet from oven and open. Pour Nacho Cheese soup all over the zucchini. Pour the salsa over the chicken breasts. Close packet, bake for another 15 minutes.

While chicken is baking, make Rice-a-Roni.

Serve chicken and zucchini on bed of Rice-a-Roni, with an optional dollop of sour cream on top.

I have got some chicken breast in the fridge but not sure what to do with them yet! Maybe Garlic Chicken pittas and cous couse or chicken salad.

I actually have a pot roast in right now with potatoes, carrots, onions and mushrooms in it. I will also make a nice garden salad to go with it.
