McCormick makes a "Grill Mates" Montreal Steak seasoning that you mix with 1/4 cup Olive oil, 2 teaspoons of the seasoning, and 2 Tablespoons per pound of "Streak."
Now despite the fact that they call this fantastic seasoning a "Steak" seasoning - I have used this particular seasoning and marinade on Pork, Chicken and my Smoked Shrimp and Salmon and they all turn out absolutely fantastic!
You will be needing a minimum of between 8 - 10 pounds of chicken for your crowd of 30 people so you will have to multiply the above ingredients by 8 - which should cover the chicken adequately and get the job done very well!
Then you would have to marinate the chicken for at least 45 minutes to 1 - 1/2 hours and turn it over several times in the marinade to keep it evenly coated before you put it on the grill.
Be careful of not "over cooking" the chicken! Marinaded meats have a tendency to "cook faster" then ones that are not marinaded!
I can guarantee you that none of your chicken will go to waste!

I experiment! Try some olive oil and garlic and a spice of your choice. Let it mariante for a few days if you'd like and you can add some vinigar, but not very much. The longer you marinate the better the taste. I like to let mine marinate in the fridge for a few days. The best way to marinate is to put some chicken in a sealable baggy, and put some marinade in there and do that with all of your chicken. This way the marinade is on all sides of the chicken. Lay the baggy flat in your fridge so that you only have one layer of chicken in each bag. Gaurenteed to be a crowd pleaser!

I personally love grilled chicken marinaded in Italian salad dressing. I usually put the chicken in a bag, pour some italian salad dressing over top of the chicken and shake the bag up. It's amazing and mouth watering.

you know what , i always have parties and cook for alot of people , people rave about my chicken lemoncello, it is a liguor that you have to buy in the liguor store but it worth the money! you marinade the lemoncello with garlic , white cooking wine , melted butter for about 1 hour on each side , then when you go to put it on the grill, pour your marinade or just the lemoncello on top for more taste and i think you will be a really big hit !

Ingredients:
2c.Olive oil(pomace oil can be used)
Juice and rind of 2 lemons
1.5 T. of fresh minced garlic
1T. dried oregano
8 ozs. tomato sauce
1 t. salt
1 t. black pepper
Directions:
Combine all ingredients and blend well. I would marinate chicken overnight. Then place marinade in sauce pan, bring to a simmer and dunk chicken in after grilling for a nice finishing touch
