Im getting married on 07/07/07. For my bachlorette in party in late june I thought about decorating my house and backyard In luau style and serving hawaiian style food but my girls and I are stuck on what to buy as far as food to serve and we don't have the ability to roast a pig! Any ideas will be greatly appreciated....thanx!!

Congratulations on your upcoming nuptials! I'm thinking that pork roast will suffice for your "roasted pig" unless you want to contact one of those companies that will come and set one up in your back yard! For luau food, think fruit kabobs, melon with prosciutto, pineapple rice, pork tamales in banana leaves, barbecued chicken, lomi lomi salmon (raw salmon with chopped onion, parsley, garlic, and lemon juice that "cooks" the salmon) and something to substitute for poi. Make some Pineapple Margaritas or Mai Tai's and have a wonderful time!

Way to go i wish you all the best . Ok here are a few ideas . Being that im a Puerto Rican and my Family is from Oahu what we do a lot instead of roasting a pig you can get a big piece of boneless pork butt and banana leaves and achiote paste . Take the pork roast and get the achiote paste and rub it all over the meat and then take about 12 cloves of fresh garlic chop it up or mince it in a garlic press and rub that on the achiote paste season with rock salt and lemon pepper then wrap in Banana leaves and tie the leaves with string and put in a 300% oven start early at least 8 hrs before your party, then when the party starts take out and untie the leaves and leave in the pan, the leaves actually look very tropical and just take a fork and shred the meat it falls apart as you run the fork thru it . Then Have a big pot of Brown Rice with Gandule beans found at the same market you buy the Banana leaves . Serve with a nice salad or in the islands they serve with Macaroni Salad and then you can have trays of assorted sushi and fresh fruit platters Pineapple and Strawberries and make a sauce 1- 8 oz cream cheese and 1 jar Krafts marshmallow cream , take the cream cheese softened and the marshmallow cream and mix together and blend well and serve that as a dip for your fresh fruit . Have Mai Tai's or a Big punch with a Rainbow Sherbert float and to that add 1 bottle 7up ,1 can pineapple juice , 2 packets of Kool Aid and 2 cups sugar and 1- 5th of Vodka , Mix those all together float the sherbert on top . Have a nice Pineapple Cake for your dessert . Good Luck !! I forgot to mention add about 2 cups of water to the bottom of the pan you have the roast in, so that it will steam and keep the leaves moist. Theres also a great web site caled Goya foods on there they have a recipe for Rice with Gandules its great and theres also a lot of Party ideas and recipes . That web site is where a lot of Pacific islanders get ideas and recipes.

here I give you some recepies I have and really enjoy with my family...... hope this helps!

(main dish)
SHOYU CHICKEN


INGREDIENTS
1 cup soy sauce
1 cup pineapple juice
1/4 cup brown sugar
2 teas. wine
1 piece ginger (crushed)
2 large cloves of garlic (mashed)
3 pounds - skinless chicken thighs - cut in half or thirds (boneless)

HOW TO:
Mix above ingredients well, add chicken. Bring to a boil and lower to simmer.
Cook slowly until chicken is TENDER.

(salad)
HAWAIIAN COLESLAW
Every lu'au needs slaw!!

4 CUP SHREDDED CABBAGE
1/2 TSP. SUGAR
1 CUP CRUSHED PINEAPPLE (DRAINED)
1/4 TSP. SALT
1/2 C. MAYONNAISE
DASH OF PEPPER
1 TBS. MILK (MIX WITH MAYO)
DASH OF PAPRIKA
1 TBS. VINEGAR

PUT CABBAGE INTO A LARGE BOWL. COMBINE REMAINING INGREDIENTS;
POUR OVER CABBAGE AND MIX THOROUGHLY. MAKES 8 TO 10 SERVINGS.

(side dish)
Sweet Potato/Coconut Soufflé
1 large can sweet potatoes (mashed)
1 can coconut milk
1/2 cup brown sugar
1 beaten egg

Mix mashed sweet potatoes with coconut milk, brown sugar & egg.
Bake @ 325 degrees for 1 hour.

(dessert)
Hawaiian fruitcake
Ingredients
2 cups sugar
2 cups flour
2 eggs
2 teaspoon baking soda
1 - 20 oz. can of crushed pineapple with syrup
1 cup flaked coconut
1 cup chopped walnuts

Mix all ingredients together, pour into a 9X13 inch pan
or 6 small loaf pans.

Bake at 350 degrees, 35 to 40 minutes.

If you use the small loaf pans, they should be ready in about 20 minutes, but check with a toothpick to see if the cakes are done.

Topping

1/4 pound margarine or butter
1 - 8 oz. cream cheese
1 1/2 cup powder sugar
1 teaspoon vanilla

Mix at high speed, spread on COOLED CAKES.
These cakes are ono and not sweet.

(exotic drink)
DESIGNATED DRIVER VERSION
(non-alcoholic)
Pineapple Juice
A "splash" of Grenadine
Garnish with a Cherry
AND PRETEND YOU'RE IN CLUB WAIKIKI
<><><>
CLUB WAIKIKI VERSION
2 oz White Rum
1 oz Lemon Juice
(just under a jigger)
2 TSP - Grenadine
Diet Tonic Water
Pinch of sweetener
(The blue or pink one)

Combine rum, juice & grenadine with ice and SHAKE.
Strain, add ice and fill with tonic.
Add the pinch of sweetener & stir.
Garnish with a slice of LIME.

Enjoy and have fun!!!!!!!!!!!!!!!!!!!!
