With maybe a peanut butter or cream cheese-looking filling Does anyone have any recommendations on how to make this happen?

Maybe cook the whole cake and cut the middle part out and die the icing a light green... depends on how big you want the cake to be.

Celery stix are usually long and have ribs plus leaves. Sooooo. ..I'm thinking you could probably accomplish this whole design by baking your cake in a jelly roll pan. The pan is larger and thinner than traditional baking pans, so you can make two layers for your stalk of celery and fill them. And, you should have plenty left over to make smaller 'branches" and the leaves. The simplest frosting would be to purchase a couple of tubs of the stuff and add your food coloring. You'll need probably two tubs for the celery stalk itself, plus leaves, and one for the filling. I'd place the frosting in a glass bowl and add 1 - 2 drops of food coloring. You can always add more if its too light. Cut the "stalk" so that one end is larger and the other is smaller. Cut the smaller "branches" with the same dimensions from top to bottom. You can cut the leaves out with a small knife. For the stalk, once its cut, place some fo the frosting in between the layers and add a second layer. Shape this layer so that the center is slightly concave. Cover with green frosting and take a fork to make the ridges from top to bottom on the outside. Attach the branches and leaves with some of the green frosting and then frost them as well. For your filling, blend the final container of frosting with a chocolate flavored coloring to make peanut butter, or you can add some really softened peanut butter to the frosting mix. Spoon it down the center and mound slightly to give it a more realistic look. Hope this turns out!

i think you should bake a log cake (a long skinny one) dig on a strip in the middle....cut the strip you cut out of the cake into smaller strips and use as the celery's foliage. Then make a green icing and spreadi it all of the whole cakse....( use it to stick the various bits together) then in the dip in the middle of cake fill it with cream.......YUMM!!!!
