The great draughtsman was Durer this link was the first i came across.but there are literally millions of stuf on the web about him . He really did drawing for drawings sake .Most drawings at this time were sketches to see what and how a picture would be and studies of clothe etc for use in a finished painting. A lot of drawing was also used to decorate manuscripts but these are of course coloured . The second link is the book of Les très riches heures du Duc du Berry.

There are many kinds of art that people attribute to medieval artists. Unfortunately, they are only a style. During the medieval times the Black Plague began to devastate the population of Europe. With so few people left, much of education, art, construction, etc. was lost. That is why, after the population of Europe began to grow again, and education began to resurface along with art, architecture, etc. it became known as the Renaissance, or re-birth. It is from the times of the Renaissance that we begin to have written records, paintings, and other documentary proof of what happened in the Dark Ages, also known as the medieval times.
You can research medieval architecture because the plague spread slowly and not all skilled craftsmen were lost at the same time. Look for work beginning in the 1200s and 1300s, and ending around the end of the 1300s to early 1400s.
It just occurs to me now, though. They must have drawn what was around them, just as we do. But we don't have that on any more than my supposition.

Religion. It's a generally good answer to all Medieval questions.
Medieval artists usually painted religious scenes for churches or private devotion. The bible for the illiterate masses in the form of an alterpeice if you will. Also they wanted to scare people into believeing so Religion.
The nobility wanted to prove they were good christians they would be painted into religious scenes.
