I would like to be able to make some kind of snack or meal after school that is really easy and fast. Please don`t submit any recipe`s straight off the internet, you will not get best answer.

If you eat meat: fry some good lean ground beef with some chopped onions - drain fat if any. Add a package of Lipton's Spanich Rice and 2 cups of water, cook over med.high heat to boiling, reduce heat and cover with lid - cook for about 10 minutes or until rice is done (stir twice during the 10 minutes). Then warm flour tortillas (20-30 seconds in microwave). Place meat mixture in center of tortilla, top with grated cheese, and wrap (both sides first, then roll) into a burrito. Eat with salsa if you like it.

Instead of super easy recipe, why not try being super-organised by cooking your meal in big batch and freeze the required portion (a bit like home-made TV dinner).

The dishes suitble for freezing are curry, lasagne, soup, hamburger (meat only) etc. One that I like the most is chicken and potato curry, which is also very easy to prepare.

You'll need (sorry I don't measure when I cook)
Chicken with bone e.g. wings (approx 1 kg.)
Curry paste (you can buy it in a can/pouch)
Coconut milk (use low-fat evaporated milk for low-fat option)
Potato
Carrot

Fry the chicken with some oil and curry paste, add potato and carrot. When fragrant, add coconut milk/evaporated milk and simmer until the potato breaks down and thickened the gravy (this should take about 45mins).

When use the low-fat evaporated milk, do not let it boil (not for long period of time anyway) otherwise the milk will curdle.

If this is not an option for you, try cheese and salad sandwich for a snack, which is super super easy & quick. As for a quick meal, try stir-fry with some cashew nuts (with the meat of your choice).

With a little preparation, you can have easy meals in minutes!

Cook up some pasta and put individual servings with frozen veggies into baggies and freeze them till you're ready to use them. Then microwave them, drain excess water off, and put on the sauce of your choice.

For sauces, there's regular pasta sauce or try condensed soups. A few spoonfuls with a little milk or water as the label indicates, and you have a delicious pasta meal. There are many good soups to use, like fat free and low sodium products like cream of mushroom...celery...chicken...broccoli...asparagus...and my favorite...cheese! I don't think that one comes in a healthy version but there is cheddar cheese and a spicy version as well. You only need a bit for great pasta.

Now cook up some white meat chicken or turkey...or get it ground to make them into meatballs and freeze them cooked (either in your baggies or separately), and you have a complete meal! I suggest whole wheat pastas as well...better for you over all but may be an acquired taste lol.

As for snacks, keep chopped veggies at hand or those wonderful frozen ones. Lots of varieties out there too! Veggies do nothing to curb appetite for me so I go for half a sandwich using whole grain bread. Make some egg salad using Miracle Whip Free, or tuna, chicken...whatever...and that half sandwich will tide you over till dinner.

1. Cheese quesadillas are healthy and quick. Take a couple of tortilla shells, top with shredded cheese only or cheese and leftover whatever (chicken, beef, veggies) top with the other tortilla and heat in microwave or in a frying pan until the cheese is melted. Cut into quarters and eat.
2. Peanut butter and apple slices.
3. Top Ramen noodles plain or adding leftover veggies or meat to it.
4. Hard cooked egg in a pita bread half.
5. Celery with cream cheese and peanuts or raisins on top.

You only need 5 min preparation
4 saltine crackers
1 slice cheese (I like the kraft deli deluxe)
4 slices apples (I sometimes buy the pre sliced apples in the fresh cut produce section)

Apples Snacks
Put the cheese on the cracker, then put the apple on the cheese.
So easy a child can prepare it by them self but fairly healthy.

Mine is even vegetarian, kinda. Not on purpose. I just like it. My mom made it when I was a kid. It's called Tomatoed Macaroni. You mix chopped canned tomatoes--recipe calls for one 16-oz., but I like to use two, or one large can--with 2 tablespoons of butter/margarine/olive oil, 1 teaspoon salt and 1/4-1/2 teaspoon dried oregano (depending on whether tomatoes are already seasoned in the can). Boil, reduce heat, simmer for 12-15 minutes. Meanwhile, cook your macaroni or whatever small pasta you like, 2 cups measured dry. Pour sauce over macaroni and stir. On top I like to put lots of (imitation/cheap) grated Parmesan cheese. Very good!

Snack, cut up some celery and put peanut butter on them.
Put some cheese on crackers. Or some ranch dressing with broccoli and carrots. Or cut up fruit with caramel dip.
Meal, grilled cheese, soup, or cut a french roll in half and put some ragu and cheese on it and toast it in the oven for a quick pizza. Put out turkey slices and veggies for a healthy snack. Good luck

My grandmother used to make us peanut butter and jelly 'fingers' which was just toast with pb&j cut into lengthwise strips, then in half. I LOVED those things.

As far as a quick meal goes, you can always do ring bologna and noodles or sauerkraut if the kids care for that. Bologna is usually pre cooked, so it's just a matter of heating it up.

Here's a couple of recipes for you .

A Grilled Ham and Swiss Cheese Sandwich with sauteed mushrooms and onions. its really fast and good trust me :)

take an onion slice it in slices then take a hand full of mushrooms throw in a pan with a little butter, saute for about 3 min then make your grilled cheese sandwich with ham as you normally would buttering both sides of the bread put in the sandwich the ham ,cheese ,mushrooms, and onions and grill that's it . This is bomb !!! Make on your favorite type of bread :)

Quesadillas

Take a fajita size flour tortilla , Tysons grilled Chicken breast in the lunch meat section , Monterey Jack cheese or mexican blend Kraft shredded cheese, put a little oil in a skillet ,add to the tortilla, slices of the Tysons grilled chicken breast ,some cheese, fold in half and grill have that with your favorite salsa for dip. That's it, really simple and its stuff you can just grab out of the fridge good luck :)
