some people use the neck bone for soup recipes and the giblets for turkey gravy. There are other uses for the extra parts so why throw them away.

The neck and giblets can be used in other dishes. Cooked giblets can be chopped and added to the dressing for the turkey. The neck can be boiled with the turkey bones and any leftover turkey to make a good turkey broth.

I use them for stock for the gravy & sometimes add them to the dressing or stuffing. I also use some of the broth from them instead of water for the dressing. My mother-in-law uses them for stock for homemade turkey & noodles to serve with the turkey dinner.
The giblets (especially the neck) have more flavor than most of the meat of the bird.

Agree with above post but also chek under the skin in near the legs too. some turkey farms will but the bag of giblets in the bird and the neck under the back skin fold. If you have any extra on the bird just place it breast side down and cut with your kitchen sheers or you can just cut it off with a sharp knife go one side and then the other cut in a V and it should come right out.

So that you can make stock or gravy - simply add a few veg and herbs and cold water and boil, then simmer for a while. Drain, reduce, season and you have a basis for soup or gravy. I wish they would jolly well do the same with chicken! They say it is because people sometimes forget to take them out of the chicken, but surely that can happen with turkey. Nanny State gone mad!!!

We used to take them add celery and onion and boil. That made a nice base to use in the box of Mrs cubersons dressing we had waiting to prepare to stuff the bird with. You cut the giblets up into tiny pieces and added them.

Giblet gravey for you and a little extra gravey for the poultry plant.
It's nice to get over a buck a pound for giblets.

I always boil them while I cook the turkey and then use the stock for making gravy or basting.

You use them, and whats left of the bird after most of the meat has been cut away, to make turkey stock. From this you make soup!
