To elaborate, I bought an aftermarket head unit for my truck, and want to wire it into my Infinity Amp and 6-speakers. Obviously, I don't have a wiring diagram for the head unit harness, it's made to plug into the factory head. Can someone point out a wiring diagram/pinout so I can just hardwire this and save $40 in cables that won't completely do the trick anyway (the ones sold at Circuit City don't accommodate the Infinity amp/speakers)

First of all, don't worry about anything special for the Infinity sound system; it will work perfectly well with a standard wire harness as long as you connect the factory amp's turn-on wire. Chrysler Infinity systems are designed to use a high level input, so an adapting harness will work perfectly. I speak from experience, having installed literally hundreds of new head units into Dodge Ram trucks.

You don't need to pay $40 for the harnesses at Circuit if you're willing to do a little extra work. You only need a single harness that fits the plug in the Dodge truck, and you can find it cheaper online or at different retailers. You can solder or crimp the wires from the harness to the plug that came with your after-market radio; the colors will match up. The extra harness from Circuit City just plugs in the back of the after-market radio so you don't have to make the connections yourself; but it only takes a few minutes to do the connecting, so it's not really worth it.

Bypassing the factory amplifiers would require pulling both front speakers, because the amps are attached to the door speakers. You'd also have to either disconnect the factory tweeters or purchase passive crossovers to keep them from playing bass. If you're keeping the stock speakers, then just keep the factory amp working with the new head unit.

Purchasing the standard Chrysler harness is definitely worth the money over cutting off your stock plug, especially if you shop around for the best price; and it will work perfectly well with your Infinity sound system.

Thank you KaeZoo. I had the same issuer. Hours of troubleshooting and being convinced on crutchfields site that I needed a $149 wire harness bypass is put to rest. I wired the blue (antenna power labeled) wire form the harness to the blue and white remote control output and the speakers work great!
