You could have them carry 1 single flower instead of a bouquet.
Many celebrities are carrying bibles down the aisle instead. You could easily have your bridesmaids each carry a bible.
Are you incorportating any traditions in your wedding? You could have a bridesmaid carry a goblet, if you are going to stomp on the goblet (jewish wedding). A broomstick if you are planning to jump the broomstick (african american tradition). Something from nature if the two of you are more outdoorsy. Feel free to have them each carry something different.
I suggested to someone that was having 4 flower girls that she have each one carry a silver platter with her "something borrowed, something blue. something old, something new" on it--one item per platter.
If you are a romantic, you could use fans. Either palm fans or victorian lace fans. Or if it is a southern wedding, small parasols.
I like best (what the other poster said) if you have a theme wedding have them carry something that fits the theme. Like if it is a medieval wedding, they could each carry a medieval goblet. A pirate theme you could carry lil treasure chests. A tropical theme they could carry leis or palm leaves. An irish wedding they could each carry horseshoes or irish poems.
Another idea is to go with something from your heritage. If one of you is Spanish in heritage, a tradition is the groom gives his bride a wedding present of thirteen coins. The bride-to-be then carries these coins, in a little bag, to her wedding ceremony. Though the bridesmaids could carry them. In some latin countries, it is a tradition to tie the bride and groom together with a silver cord. The bridesmaids could each carry a length of cord. One of the most important and enduring traditions of the Belgium wedding is for the bride to carry a specially embroidered handkerchief that has her name embroidered on it.
Hope these are some ideas for you. Good luck! and Congratuations on your engagement.

I think candles would make me nervous. There is the dripping wax and your girls may already be nervous without having to carry an open flame down the long aisle! It does sound like it would look really pretty though. I know you said you don't want flowers, but have you ever seen the pomanders? It's a ball of flowers on a ribbon that they put around their wrist. That would be a little different than the traditional bouquet.

what is your theme? first of all, if its a spring theme, you could have them carry a small watering can, if its a winter wedding, you could have them carry a big snowflake on a ribbon attached, beach, have them carry a little arrangement of shells and beachy things. ive also been contemplating the same thing, what else could i do besides the traditional flower boquet. let me know what your theme is and i may be able to help you! good luck!!

Here is an interesting article:
http://www.ultimatewedding.com/articles/get.php?action=getarticle&articleid=660
It suggests things like candles, wreaths, fruit baskets, crystal balls, ivy.
Have fun with your wedding. Make it your own, and make it special for you and your husband. Enjoy the planning, and don't worry about the little things. I was married less than a year ago and everything goes by so quickly. Cherish the important things, and don't let little things get in your way of enjoying your big day.
Good luck!

I agree with the candle idea. Another idea would be to not have them carry anything and instead have that elegant something be something else.

candles are a great idea...but if the open flame makes you nervous, you can get electric candles that look totally real...i held one at my parent's rededication ceremony when i was ten. we tied some long ribbon on the end and it looked really beautiful.
here's an example

Candles would be pretty! Or if there is a theme for your wedding, something that goes along with your theme.
