Cherry Cheesecake

1 cup graham cracker crumbs
3 tablespoons sugar
3 tablespoons margarine, Melted
24 ounces cream cheese, Softened
3/4 cup sugar
3 large eggs
1 teaspoon vanilla
1 (21 ounce) can cherry pie filling
Combine crumbs and margarine; press onto bottom of 9-inch spring form pan.
Bake at 325 degrees F., 10 minutes.
Combine cream cheese and sugar, mixing at medium speed on electric mixer until well blended.
Add eggs, one at a time mixing well after each addition.
Blend in vanilla; pour over crust.
Bake at 450 degrees F., 10 minutes.
Reduce oven temperatur to 250 degrees F., continue baking 25 to 30 minutes or until set.
Loosen cake from rim of pan; cool before removing rim of pan.
Chill.
Top with pie filling just before serving.

Strawberry Cheesecake:
Very good recipe!
4¾ hours 3½ hours prep
12 servings
1 1/2 cups graham cracker crumbs
2 tablespoons sugar
3 tablespoons margarine or butter, melted
Filling
19 ounces cream cheese, softened
1 cup sugar
2 teaspoons lemons, rind of, grated
1/4 teaspoon vanilla
3 eggs
Glaze
1 cup strawberries, mashed
1 cup sugar
3 tablespoons cornstarch
1/3 cup water
1. Pre-heat oven to 350 degrees Crust: stir together graham cracker crumbs and sugar.
2. Mix in butter thoroughly and press into a 9" springform pan.
3. Bake 10 minutes.
4. Cool Reduce oven temperature to 300 degrees Filling: beat cream cheese in large mixing bowl.
5. Gradually add sugar, beating until fluffy.
6. Add lemon peel and vanilla Beat in eggs one at a time. Pour into shell.
7. Bake 1 hour or until center is firm.
8. Cool to room temperature and then spread with the strawberry glaze. Chill 3 hours.
9. Glaze: blend sugar and cornstarch together in a small saucepan.
10. Stir in water and strawberries.
11. Cook, stirring constantly, until the mixture thickens and boils.
12. Boil and stir for 1 minute. Cool thoroughly before spreading over cheesecake.

Best Cheesecake Ever!! :)
INGREDIENTS:
2 pounds cream cheese
3/4 cup white sugar
2 eggs
1 teaspoon vanilla extract
2 tablespoons cornstarch
1 cup sour cream
1 1/2 cups graham cracker crumbs
6 tablespoons melted butter
1/4 cup white sugar
DIRECTIONS:
Preheat oven to 400 degrees F (205 degrees C).
Mix graham cracker crumbs, melted butter, and 1/4 cup sugar together. Press mixture onto the bottom of one 9 or 10 inch springform pan. Place in freezer for 10 minutes. Cream 3/4 cup of the sugar and cream cheese until smooth. Beat in eggs, vanilla, and cornstarch until just mixed. Stir in sour cream until blended. Pour into prepared crust. Bake at 400 degrees F (205 degrees C) for 45 minutes. Turn oven off and leave cake in oven with the door ajar for 3 hours. Serve with your favorite topping (I like strawberries).

I make a cheese cake recipe from 10% pressed cottage cheese
It is so easy.
1 graham wafer crust made with 1 1/2 cups graham wafer crumbs , 6 tbsp soft butter or margarine, 2 tbsp sugar 1/4 tsp cinnamon.
press into spring form pan
Filling
1 1/2 lb cottage cheese
3 eggs
2 tsp vanilla
1 cup + 2 tbsp sugar
Process ingredients until smooth
Pour into graham wafer crust.
Bake 35 minutes at 375 degrees
Turn heat off and leave cake in oven for one hour with door partly open until cool
Top may crack slightly and cake may fall a little
You can top with canned pie fillings, fresh strawberries canned drained peach slices, or Mandarin orange segments arranged attractively on top cheese cake when cool
I sometimes put the cherry pie filling on top of graham crust then pour in my cheese filling and bake. Just a different way
It's delicious.

Key Lime Cheesecake
Ingredients:
Crust
3 cups graham cracker crumbs
2/3 cup sugar
2/3 cup butter, melted
Filling
1 cup fresh lime juice
1/4 cup water
2 envelopes unflavored gelatin
1-1/2 cups sugar
5 eggs, slightly beaten
2 teaspoons grated lime rind
1/2 cup (1 stick) butter, at room temperature
2 packages (8 ounces each) cream cheese, at room temperature
1/2 cup heavy cream, chilled
Whipped cream for garnish (optional)
Lime slices for garnish (optional)
Directions:
Prepare crust:
Stir crumbs, sugar and melted butter in a medium-size bowl. Press over bottom and up sides of a 9-inch springform pan.
Prepare filling:
Combine lime juice and water in a small saucepan; sprinkle gelatin over top. Let stand 5 minutes to soften. Stir sugar, eggs and lime rind into pan. Cook, stirring, over medium heat until almost boiling, about 7 minutes or until instant-read thermometer registers 160 degrees F.; do not boil. Remove from heat.
Beat butter and cream cheese in a large bowl until well mixed, about 1 minute. Gradually beat in lime mixture until well blended. Refrigerate, stirring occasionally, until mixture thickens enough to mound slightly when dropped from a spoon, about 45 minutes.
Beat chilled cream in a small chilled bowl until stiff peaks form. Fold into lime mixture. Pour into prepared crust. Cover; refrigerate until firm, 3 to 4 hours.
Run a thin knife around inside of pan to loosen sides; remove sides of pan. Garnish with whipped cream and lime slices if desired. Store in refrigerator.
Note: For authentic Key lime flavor, use Key limes, which are more aromatic and citrusy than the commonly available, larger Persian limes.

ok its not homemade but i love the jello no bake cheesecake mix you can get at any grocery store or wal mart.they do have a strawberry type too i like the new york syle simple easy and good.good luck.
