i want the cake to be moist.plus,do u recommend adding flaked coconut because i've read many recipes that called for it and many that didnt.plz help!

cooks.com said to drain it.. and i agree, especially as long as you have some other moist ingredients. it should come out yummy :)

Drain the crushed pineapple for up to one hour in a strainer, in the fridge. I personally like flake coconut and would add it. But not every one likes it, so think of who is eating the carrot cake. If they like it add it, if not don't. You can keep the cake moist if you don't over cook it, plus some people I know add a scoop of mayonnaise to the batter with the other ingredients.

As has already been answered, yes, you want to drain the pineapple or your cake will not hold together.
As far as coconut goes, it is strickly a personal thing. Do you like coconut? Will the people who eat it like it as well--or does it matter. It is up to the cook---and that is YOU !

Absolutely..........juice will make it 'mushy', then hard !! Not Good. If you need a recipe for carrot cake with pineapple or cheesecake with pineapple, I have them in my collection. Or, if you want a box mix, get Betty Crocker Carrot Cake, and look on back for 'Ultra ' recipe....mmmmm!! Or e-mail me, I have hundreds of recipes, especially for Baking. fuzzypetshop@yahoo.com.

yes, the juice that is in the pineapple will come out in the oven and make the cake Moise, if you don't drain you might end up with a lose cake

yes, because the pineapple juice will drown out all the other flavors, and make the cake soppy.
