I used the "cold water" method, where you put them in a pot of water, heat till its boiling, remove from heat and cover, let sit for 23 minutes than move them to cold water. I forgot and left the heat on for 23 minutes (actually I stopped it at 20 when I realized my mistake). Besides the greyish/greenish yolks, will there be anything wrong with them?

You can always tell a bad egg by the smell..
both a raw and hard boiled egg will give off a foul odor when they are bad.

I use the full boil method for 15 minutes, but sometimes I don't see when the water starts boiling. So they may be at a boil for 20+ minutes. They're always just fine. Just drain and shake and put more cold water on them as normal.

They might smell a little bit of sulphur from over cooking. Just crack the shells while they are in cold water & let them sit a bit before peeling them completely.

No, but you might want to omit some of the yellows. To cut down on the gas factor. They are fine. I think we've all done that at least once.
