The couscous grains are made from semolina (coarsely ground durum wheat) or, in some regions, from coarsely ground barley or millet. The semolina is sprinkled with water and rolled with the hands to form small pellets, sprinkled with dry semolina to keep the pellets separate, and then sieved. The pellets which are too small to be finished grains of couscous fall through the sieve to be again sprinkled with dry semolina and rolled into pellets. This process continues until all the semolina has been formed into tiny grains of couscous.
This process is very labour intensive. Traditionally, groups of women would come together and make a large batch of couscous grains over several days. These would then be dried in the sun and used for several months. In modern times, couscous production is largely mechanized, and is sold in markets around the world.
Berkoukes are pasta bullets made by the same process, but are larger than the grains of couscous.

In the United States couscous is known as a type of pasta, probably reflecting the influence of Sicilian immigrants. However in most other countries it is treated more like a grain in its own right.

Couscous is a pasta. It doesn't come in noodle form and looks more like rice when cooked. It is made from Semolina; durum wheat. It is good with lots of foods, just like polenta or risotto. Very versatile

It is a pasta. Here's a recipe.This is vegetarian...and a good side dish for meat-eaters.
1 1/2 cups couscous
2 cups hot vegetable broth (chicken stock for meat eaters)
10 dried apricots, chopped
1/4 cup of chopped walnuts or almonds
2 scallions, sliced thin, green parts only
1 orange, juiced
2 tablespoons extra-virgin olive oil
Kosher salt and freshly ground black pepper
2 tablespoons chopped fresh parsley leaves or mint leaves, for garnish
Put the couscous in a medium bowl; pour the hot stock over it and stir to combine. Cover and let sit for 10 to 15 minutes. Uncover and fluff with a fork. Add the apricots, scallions, nuts and orange juice; drizzle with olive oil and season with salt and pepper. Toss gently to combine. Garnish with chopped parsley or mint.
