I have been trying to lose weight and was told that I should replace as many carbs as I can with vegetables. I have been eating a lot of canned green beans since they are cheap and easy to prepare but are they really as good for me as I think they are. Since they are canned does that add a ton of calories, salt and preservatives? I am living abroad so the nutrition facts are not on cans here like they are in the USA.

Try looking for "No Salt Added" or such if you can find it. Otherwise, this is what a typical can of green beans contains:

French Style (Green Giant) 14.5 oz can:

70 calories
0.0 g Fat
0mg Cholesterol
3.5 g Protein
1,358.4 mg Sodium (VERY HIGH)
13.9 g Carbs
3.5 g Fiber
7.0 g Sugar
69.7 mg Calcium

If you can find No Salt Added, Cut Green Beans (14.5oz. can):
68 Calories
0g Fat
0mg Cholesterol
3.4 g Protein
34mg Sodium (MUCH BETTER)
13.6g Carbs
6.8g Fiber
6.8g Sugar
67.9mg Calcium

Ultimately fresh or frozen veggies are best, nothing added at all. Best of luck, I hope this helps.

Yes they do lose some of their nutritional value when they are canned and cooked. Fresh, raw veggies are best, but when you're looking for price and convenience, sometimes you have to get canned veggies. They also do usually have a lot of sodium but not a lot of calories. Canned veggies are the worst of the lot. Fresh is best with frozen being good too. Yes they contain lots of salt etc when they are in the can. Switch to frozen as those have more nutrition than canned (aka already cooked) veggies.

soak the salted canned beans and rinse them well. That will remove a lot of the sodium

Use the canned. They work fine....it is always nicer to use fresh when you can, but this is not one of those instances and you have to use what is convenient. Actually, the original recipe called for the canned kind... :) enjoy your meal!
