It's a metaphor....four legs int eh morning is like a baby, when it is crawling...two in the afternoon is like a human when they walk upright on two legs...and three in the evening is like an old person when they are walking with their own two legs and a cane

In the "morning", early in life, man crawls on all fours.
In the "afternoon", in the middle of life, he walks upright on two legs.
In the "evening", near the end of his life, he uses a cane, with his legs, which would make three.
