I was thinking about doing it in the crockpot, but I dont usually eat thighs and legs....any ideas?

I like to roll them in flour or breadcrumbs (or crushed corn flakes or whatever bread-like substance you have laying around). Add seasoning to the crumbs (salt, pepper, italian seasoning or sage or whatever flavor you like..I even use parmesan cheese sometimes) Then top each with a pat of butter and bake @ 350 for 45 mins or so until done. They get crispy, so it's like a healthier version of fried chicken.

Thighs & legs are perfect for what I call mushroom chicken. Just brown the chicken pieces. Then in a seperate bowl,mix the following ingredients together,& pour over browned chicken pieces. Simmer until chicken is done. If sauce is not thick enough for gravy,thicken it with cornstarch dissolved in COLD water.
1 can mushroom soup (or any kind of cream soup)
1/2 cup of a sweet wine,(if desired)
1 soup can of water
1 TBS. of worchestershire sauce
1/4 tsp. of pepper
a dash of onion(or) garlic powder. A can of sliced mushrooms or fresh mushrooms,sliced if desired.

The best theigh recipe is to put a dash of pepper and garlic salt on each theigh, then put them in a small pan and cover them with cream of mushroom soup. Baked at 400 degrees for 30-35 minutes. I make this all the time and it is the best chicken i have ever had.

There is more flavour in the legs and thighs. Brown them in a fry pan and put into the crock pot. Add some fried onion and stock and cook until done.

Chicken Adobo

1 cup soy sauce
1 cup vinegar
1 cup water

Low simmer chicken in it for about 2 hrs
Serve over white rice spooning sauce on top

A low fat way is to wash them well then dip them in some lowfat yogurt then in crushed corn flakes. Lay them on a sprayed ( Pam or some other low fat spray) baking pan. Sprinkle with some your favorite seasomings and bake until golden brown. Oven Fried Chicken

preheat oven to 375 wash chicken
1 cup flour
1/3 cup cornmeal
t. sage
t.garlic
2t. salt
t.paprica
t. pepper
mix dry stuff and roll chicken in it
get a pan with a rack
place breaded chicken on rack
drizzle butter on it
bake 1 hour or till juices run clear
should be a nice juicy chicken with crunchy coating

Boil them for about 30 minutes, then put them in a baking dish/pan and cover with bbq sauce. Bake at 350 for 30 minutes.

I like to cook mine and just 5 minutes before done I brush sweet and sour sauce and finish baking. Easy and quick.
Normally bake 350 for 45 minutes to an hour. Good luck to you.

Maybe put them on low in the crock pot for like 6-8 hours...season them with whatever you like before cooking...about an hour before serving pour BBQ sauce on them. Pretty simple and it turns out yummy! (messy eating tho) It would be even better on the grill tho! Good luck!
