Because it was fullfilled in Christ
Col 2:10 and you have been given fullness in Christ, who is the head over every power and authority.
Col 2:11 In him you were also circumcised, in the putting off of the sinful nature,[a] not with a circumcision done by the hands of men but with the circumcision done by Christ,
Col 2:16 Therefore do not let anyone judge you by what you eat or drink, or with regard to a religious festival, a New Moon celebration or a Sabbath day.
Col 2:17These are a shadow of the things that were to come; the reality, however, is found in Christ.
However it is a good question for jews: Why they aren't offering blood sacrifices as advised by Moses?

Just because people say they are Christians does not mean that they follow the Bible 100%. There are Christians who do not eat any unclean animals, including pork products. Also, when we study the Bible we should not look at just the old or just the new testament. The Bible needs to be studied in its entire context, both old and new testament. I know there is a verse in the new testament ( I apoligize, I can't remember where at the moment, but if you really want to know you will take the time to look it up for yourself) that says that either a circumsized or an uncircumsized man will enter into the kingdom of Heaven. It is not necessary for this to be done now. The other simple reason is this.
There were 2 sets of laws given to Moses. One was the Ten Commantment (The Ark of the Covenant, The Law of God), and the other was the Law of Moses (The Book of the Law). This second book was all of the cerimonial laws rituals that the Jews were required to follow. Circumsion was one, sacrificing of animals for forgivness of sins was an other, and there are many more. These laws were in effect until the crucifiction of Christ. Colossians 2:14 says, "Blotting out the handwriting of the ordinances that was against us, which was contrary to us, and it took it out of the way, nailing it to the cross." Most people use this text to say that the Ten Commantments were nailed to the cross therefore we don't have to follow them. But if you really focus on what this text is saying, its not talking about the Ten Commandments at all. First, look at "handwriting of the ordinances" The Ten Commandments were written by the finger of God, not in someone's handwriting; however the Law of Moses which contained many ordinances was writen by the hand of Moses. What law was nailed to the cross? It was the law of Moses not the Ten Commandments. Because Moses Law was nailed to the cross we do not have to follow circumsion or any other ordinances that are in the Book of the Law.
Christians who eat pork claim that they only have to follow the new testament and not the old, but this is wrong. We need fo follow the Bible in its entirety.

First, many Christians now have babies circumsized because it has become common knowledge that it causes high health risks not to. Some people don't but most do. I has nothing to do with religion. As to pork, during that time it was deadly to eat pork due to the way the pigs were raised. It is now known that you must cook pork completely to avoid the health risks. There are many dietary restrictions regarding dairy and meat and so on in the Jewish traditions. Not all Jewish people adhere to those restrictions. Those traditions were also not incorporated into most Christian traditions. You have to understand that not all Christians live and worship the same the same as in any other religion.

Because we follow the New Testament laws over the Old Testament laws. That means that any law from the Old Testament that is affirmed in the New Testament is to be observed, but any law from the Old Testament that is overturned in the New Testament is to no longer be observed for someone to gain acceptance into the family of God. Both of these laws that you have just mentioned are dealt with by the Apostle Paul in the New Testament, where he says that they are no longer necessary for acceptance into God's family. That is why Christians do not have to circumcise their males nor follow any special dietary laws, such as not eating pork.

Eating pork and being circumcised were part of the Mosaic Law. Jesus fulfilled the law for us. We no longer live by guidelines or statutes. We live by faith. These, however, are prefigurements of New Testament dogma. Hence, Baptism replacing circumcision and the customs of the Gentiles adopted as justified by the Apostles through the Holy Spirit.

The OT law was fulfilled by Jesus at the Crucifixion. Remember Peter had a dream In it he saw a sheet come from Heaven and on that sheet was all kinds of meats. Peter said he could not eat of those meats because they were unclean and God told his. "What I have called clean let no man call unclean." Peter took and ate.
Circumcision is an outward sign of an inward belief. It also was the mark of a Jew. At the Jerusalem council ; Galatians, reported that circumcision was no necessary for salvation.

Because Jesus Christ came along and explained that God's word is more important than some of the laws. I believe circumcision was meant for the Jews to identify them from the Gentiles. Peter said in Acts 15: Men and brethren, you know that a good while ago God chose among us, that by my mouth the Gentiles should hear the word of the gospel and believe. So God, who knows the heart, acknowledged them by giving them the Holy Spirit, just as He did to us, and made no distinction between us and them, purifying their hearts by faith. So then the Pharisees kept quiet about circumcision..
I personally think males should be circumcised, one of the reasons being hygiene.

1Corinthians 10:23 All things are lawful for me, but all things are not expedient: all things are lawful for me, but all things edify not.
Although I am free to eat pork, If I am breaking bread with a Jewish friend I would not order pork in respect for them.
Circumcision was a tradition of the Jewish faith and not required to follow Hm.
Romans 3:30 (NKJV) since there is one God who will justify the circumcised by faith and the uncircumcised through faith.

Once the Christians converted all the Jews that they could, and had to convert Gentiles, they decided to drop many of the rules in Judaism.
St. Paul justified this by saying he had a dream where god told him that the old rules didn't apply, I think.
