They are all great value for money.
The Nikon D40 is the cheapest of the lot, followed by the Nikon D50 and Nikon D40x.
Then the Canon Rebel XTi
Then the Nikon D80
Then the Canon 30D
Then the Nikon D200
Then the Canon 5D, the Nikon D2Xs and the Canon 1D series.
All of these Canon and Nikon models leapfrog each other in terms of price, features, and build quality. You can't even do a straight comparison between the 10 megapixel models - every camera has something special.
Both brands also have more lenses and flash guns, etc. than you can shake a stick at - from budget options to professional gear for every occasion.
If you have specific needs, you might find that only one camera suits your needs, or that you should scratch one or two (entry level) models from your list but otherwise I'll bet either brand will do.
And then there's personal preference - some people just like the way that Canon or Nikon controls work, or the way the camera feels. And this is also important.
Add some details to your question if you want specific advice. There are some very knowledgeable photographers that are reguars in this category.
The breakdown here is about 50% Canon users, 40% Nikon users, and 10% Pentax or other. Fhotoace is a pro and he uses Nikon (for the most part). I'm an amatuer. I also use Nikon.

Both Canon and Nikon are very good. You need to try out both in a store and decide which one feels right, the reviews won't be able to tell you that. Once you choose Canon or NIkon, (or any other camera brand for that matter) you are stuck with it as the lenses are NOT compatible between different camera brands, so don't let small differences in price affect your long term decision about which camera brand to purchase. Once you have more than a few lenses, it becomes very expensive to switch brands. Either of those cameras would be a great choice. Both Canon and Nikon have lots of lenses so either lens system would be a good one. Remember that the person taking the picture is the most important part of the equation. There are plenty of great images taken with lousy cameras just as there are plenty of lousy images taken by great (or expensive) cameras.
