i need a southern recipe for salmon patties,nothing fancy just the basic country style salmon patties.and any ideas of what would go well with salmon patties. thank you in advance!

Southern Fried Salmon Patties:

35 min 15 min prep
4-5 servings
4-5 patties

1 (14 3/4 ounce) canned salmon
1/4 cup onions, finely chopped
1/4 cup cornmeal
1/4 cup flour
1 egg
3 tablespoons mayonnaise

1. Open salmon and drain thoroughly. Place drained salmon in mixing bowl and flake evenly with a fork.
2. Add onion, corn meal, flour, mayonnaise, and egg. Stir until well blended.
3. Shape the mixture into patties about the size of an average burger or less.
4. Cook in oil in skillet over medium heat until browned on each side. Turn once while frying.
5. Note: The mayonnaise helps the patties hold their shape and keeps them from being too dry.

Here is a basic recipe, you can add what you want to it if you choose: 1 to 2 cans of salmon or fresh salmon 1- Chopped onion/diced 1-egg salt & pepper mix together with hand or large spoon have a separate bowl or plate with flour seasoned with a little pepper & salt remove bones from salmon shape the salmon mixture into round balls and flatten on flour dredging both sides of patty in flour set aside and continue this until all salmon mixture is gone. Heat oil in frying pan/skillet and cook salmon patties making sure to flip on each side of patty with spatula until golden brown.

I am a Southern Gal through and through and I make an easier recipe than the other one listed.
1 can Salmon
2 eggs
4 tablespoons Flour
Salt and Pepper as desired
Mix all the ingredients well, and roll out the patties in your hand and put into a Hot Frying pan with Grease and cook on Medium High, flipping each side as the outer edges turn brown. Bonapetite Here in the South we like to eat Rice and Gravy with our Salmon Patties, but a nice Green Salad and Mashed Taters go with it well also.

Here's the recipe for some reason I always serve them with peas. it's kind of traditional
1 14.75 0z. can salmon
1/2 med. onion, chopped
2 eggs
1 tsp. ground pepper
1 tsp. fresh lemon juice
1 whole pkg. saltine crackers, crushed

Empty 1 can salmon & juice into large mixing bowl (remove bones). Add 2 eggs. Add lemon juice. Stir mixture well. Add onion, pepper, crackers. Stir.
Form into patties 3/4 to 1 inch thick. Set aside on plate or wax paper (make 5-6 patties). Let set 5 minutes.

In large frying pan heat 1/2 inch cooking oil to med. high temperature. Do not skimp on oil. When oil is hot place patties in pan and cook 4-5 minutes per side. Make sure patties get cooked all way through. Center should not be cold.

Patties will be beautifully brown, crunchy, and very delicious. Squeeze on some fresh lemon. mmmmm... they are to die for.

SALMON PATTIES

1 (15 3/4 oz.) can salmon, drained
2 eggs, beaten
Approx. 16-20 crackers (must be enough to hold together mixture to form patties)

Using fork, mash together salmon and eggs until well mixed. Crumble crackers into mixture and blend. Form patties and place into skillet with melted butter and fry on both sides until lightly browned but crispy on edges.

Take bread crumbs I like the seasoned ones from the market set on a large plate set to the side. In a large bowl take 2 cans salmon pick out any bones. Add one tablespoon mayo, salt & pepper to taste one egg & one teaspoon dijon mustard mix well form into patties & dip on each side in the breadcrumbs and cook in oil (I like peanut) for five min on each side. I like Aspergess in holdense sauce & garlic mashed potatoes.
