Sheila's Simple Chocolate Balls
1 pkg. Oreo cookies*
1 8 oz. pkg. cream cheese
1 pkg. almond bark (milk chocolate or white chocolate)
*Regular Oreo cookies can be substituted with mint or peanut butter Oreos, for varied flavor.

In a food processor, blend Oreo cookies to a fine powder. In a bowl, combine powdered Oreos with cream cheese. Mix thoroughly with hand-mixer or wisk.
Roll mixture into walnut sized balls.
Melt almond bark in a double boiler. Individually drop ball mixtures in chocolate and cover completely.
Drop balls on wax paper or foil to dry.
Makes 2-3 dozen.

Optional topping
After letting chocolate balls dry, melt fresh almond bark. For topping milk chocolate, use white chocolate. Food coloring can be added to give extra visual flair or indicate flavor of Oreos (example: light green for mint cookies, light brown for peanut butter).

*FOR ADULTS:
Kahlua Balls
2 1/2 cups chocolate wafer crumbs
3 tbsp. light corn syrup
2 tbsp. cocoa
1 cup powdered sugar
1 cup chopped pecans
1/2 cup Kahlua
extra powdered sugar
In a large mixing bowl, combine wafer crumbs, corn syrup, cocoa and sugar. Mix thoroughly
with an electric mixer or in a food processor. Blend in pecans and Kahlua and mix together
to form a stiff dough. Add a little extra Kahlua if necessary. Separate small portions of the dough
and shape into bite sized balls. Roll the balls in powdered sugar. Store in an airtight container.
Add a little more powdered sugar before serving.

TRIPLE CHOCOLATE FUDGE 1/2 cup butter 4 1/2 cups sugar 1 can (1 1/2 cups) evaporated milk 4 1/2 cups mini marshmallows 2 cups chocolate chips (semi-sweet) 1 12 oz bar sweet baking chocolate, chopped 2 1 oz squares unsweetened chocolate, chopped 2 teaspoons vanilla extract 1/2 teaspoon butter rum schnapps or amaretto 1 cup pecans, walnuts or macadamia nuts, chopped Line a brownie-sized baking pan with wax paper or foil, covering sides of pan. Spray with non-stick spray or grease foil with butter. Combine butter, sugar, and evaporated milk (do not use sweetened condensed milk) in a saucepan stirring over medium heat until butter is melted and sugar is dissolved. While constantly stirring, turn to high heat and allow to reach a rolling boil. Once mixture is boiling, stop stirring and allow to boil for an additional 5 minutes, then remove pan from heat. Stir in marshmallows; when melted, add chocolate and continue to stir until all is melted and well combined. Stir in flavorings (vanilla and butter rum or amaretto), then add chopped nuts. Immediately spread mixture in the lined baking pan. Sprinkle with demerarra or colored sugar (optional). Allow to cool at least one hour before cutting into squares for serving. Submitted by: CM

Chocolate Balls
INGREDIENTS
1 cup peanut butter
3/4 cup confectioners' sugar
1 cup graham cracker crumbs
2 cups semisweet chocolate chips
3 (1 ounce) squares semisweet chocolate, chopped
1 tablespoon shortening
DIRECTIONS
In a medium bowl, mix together the peanut butter and confectioners' sugar until smooth. Stir in graham cracker crumbs until well blended. Form the dough into 1 inch balls by rolling in your hands, or by using a cookie scoop.
Melt the semisweet chocolate chips, semisweet chocolate squares, and the shortening in the top half of a double boiler. Use a fork to dip the balls into the melted chocolate, and place on wax paper to cool until set.

CHOCOLATE BALLS
1 can Eagle Brand milk
1 lb. shredded coconut
2 lb. powdered sugar
1/2 c. melted butter
1 c. blanched almonds
1 1/2 tsp. vanilla
3 tsp. brandy or rum
Work well with hands and shape into balls. Chill on a cookie sheet in freezer, 15 minutes. In double boiler melt 12 ounce chocolate chips and 1/2 block paraffin wax. With toothpicks spear balls on sides and dip in chocolate mixture to coat. Drop back on cookie sheet and twirl toothpick out.
Will have enough chocolate left to do 1 pound Christmas Acorns and 1 small banana- Dip large end of whole almond in chocolate to about 1/4 or 1/3 of almond. Dip in chocolate cake decorating sprinkles. Set on wax paper to dry.
