Shrimp and Artichoke Pasta Salad

Ingredients:
9 ounces artichoke hearts, quartered
2/3 pound shrimp, cooked, peeled and deveined
1/4 cup red wine vinegar
2 tablespoons Dijon mustard
2 tablespoons fresh chives, chopped
1 whole egg yolk
1 tablespoon shallots, minced
1/2 cup canola oil
freshly ground pepper, to taste
1/2 pound pasta shells, cooked
1/4 cup pine nuts

Prep:
Place artichoke hearts and shrimp in large bowl.
Combine vinegar, mustard, chives, egg yolk and shallots in food processor or blender, purée. Gradually add oil in a thin stream while machine is running. Season to taste with pepper.

Add cooked pasta to shrimp and artichokes. Pour dressing mixture over pasta, shrimp and artichokes and mix gently but thoroughly. Cover and refrigerate at least 3 hours. (Can be made up to one day ahead to this point).

Stir in pine nuts just before serving.

Italian Pasta Salad:
16 oz box of cooked spaghetti
16 oz bottle Italian salad dressing
one green pepper chopped
one red pepper chopped
one cucumber chopped
one tomato chopped
salt and pepper to taste

Cook spaghetti and drain into salad bowl
Add chopped vegetables
Pour salad dressing over everything and toss
Sprinkle with salt & pepper to taste

I love a taco salad with nacho chips, re fried beans, onions, cheese, tomatoes, and sour cream. I also enjoy eating a vegetable salad with ranch dressing. YUM!

My favorite receipe is something my father taught me to make i dont know the name of it but this is how it goes:

Warm pasta prefereable a ziti cut
Diced up mozzarella cheese
Diced up plum tomatoes
Oil and Vinegar drizzled on top
Lemon Rinds

Mix it together until the mozzarella melts and eat warm
