Probably to protect the delicate insides from the heat and also any predators that would eat the fruit.

coconuts grow on very high tall trees, by nature it is difficult to pluck them , historical people might have been consuming them only by pocking up from ground ,.hence natrue has secured it by making hard which shluld not crack and get spoiled when fall on ground

Because they have to fall from a very tall tree and if they werent hard they would smash when they hit the ground.
