Hi, I'm a deli chef and have to make a number of different sandwhich fillings eveyday for our company. I'm bored of doing the usual cheese, egg etc so I'd love to know what you'd like in your favourite sandwhich... be as creative as u like!

1. lettuce, strawberry or peach, tomato, walnut mayo
2. cucumber, sliced boiled potato, coriander with Indian yoghurt chutney
3. unagi (canned eel, available in Asian food market) with wasabi mayo and green onion
5. butter and good quality cheese
6. sprouts, avocado, red capsicum, coated with garlic spiced olive oil and white wine vinegrette.

except #3, all the rest can accompany deli meat (ham, salami, prosciutto..)

as a vegetarian, I would love to see a sandwich loaded with fresh veggies and sprouts, perhaps a grilled portabello mushroom, or a sunflower veggie patty. When I did eat meat, one of my favorite sandwhiches to make was a triple layer sandwich, with ham spread, pimento cheese, and egg salad. You just slice the roll like you would for a layer cake, into three sections, and spread a different spread on each layer. I used to make a giant one, with a whole loaf of round bread, then "ice" it with seasoned cream cheese, and slice it into cake like wedges-my kids loved it! It makes a great presentation, and would likely sell well. I know I would chose something like that over the typical stuff. Good luck!

Sorry to sound boring but I love BLT's.
Sandwiches with good quality roast chicken are marvellous you can add any number of green salad variations to ring the changes. People like the old favourites and not everyone wants innovation. Remember top quality ingredients and plenty of filling are the main criteria. If your bread is top notch and you have a variety of different bread types you can't go wrong.

Cheese, tomato, with salad and chopped chilli's
Cold roast pheasant with watercress
Tuna, onion, sweetcorn and mayo
Roast chicken, sun dried tomatoes and tapenade (olive paste)
Smoked salmon, lemon mayo and capers
Hummus and salad
Smoked mackerel with cream cheese and salad
Prawns with avocado
Bacon omelet with onions and mushrooms

I like sweet fruity sandwiches, I like roast chicken with avocado and onions. Or vegetable like avocado, onion cheese, pineapple, cucumber. I also like boiled egg avocado and onion. I also like thin cut apples with cream or cottage cheese, with or without bread.

siu mai in spicy tomato sauce. On second thought, that filling would work better with baguette. I suppose my favourite filling is roast turkey, cress and coleslaw.

Peanut butter and jam or banana is always great.

Chicken and sweetcorn/pineapple.

Melted cheese and any meat (tuna, prawns, chicken).

Wow, my mouth's watering.
