You can trust Tahini. It's at least as durable as peanut butter in any type of jars. Mine are usually used up within four weeks though, but it has never gone bad on me, ever. Keep it in the fridge though.

Mine was open for about 3 months. It didn't have an expiration date, so I figured it was like ketchup and still used it. Nobody at the party got sick.
