That would definately be a health code violation. If the soup was served to a customer then it is completely reasonable to expect that the customer tasted the soup and basically got saliva in the soup. That means that the saliva will now be mixed in with the rest of the soup. It is a small amount but it is enough to be unsanitary. Also, you have no idea what else the customer has done with that soup. Please give me the name of the restaraunt so that I may never go in there. If they are willing to do this, then who knows what other health code violations that they have.
This is the kind of thing that can get a place shut down. At the very least, if the customers knew about these practices they would not show up again and the place would go out of business.

Sous chef. Sous means (loosely) beneath so it is a lower rank than head chef. You have lots of ranks in a big kitchen..........Chef de partie Head Chef (the authority in the kitchen) Sous Chef (second-in-command) Chef Steward Working Chef Chef's Assistant Chef de Partie Night Chef Banquet Chef and the list goes on with Cooks preparing different parts of a meal i.e. soups, broilers, vegetables, etc. Wikpedia will give you the list

That is so wrong-o! Those soups must have so much saliva in them from patron repeatedly dipping their spoons in after they've been in their mouths! ICK! That goes against every HACCP or ServSafe principle I know. And it should be common sense! Report him to the chef. And if the chef shrugs about it, make an anonymous call to the health dept. You'll be doing the world a favor.

Thats a common practice in many restaurants-taking the leftovers and turning them into other dishes. I used to own a restaurant, and when I first bought it, that was the common thing to do. Needless to say, I stopped it immediately, but found out it is quite common. Some places even use meat scraps left on plates to make soup in the first place-another reason I no longer eat out, ever.

Thats against so many health codes, he needs to be reported, try and get some proof, like video on cell phone or something. You don't know what they may of had and dumping the soup can get a lot of people sick and a big lawsuit against the restaurant if people knew that was happening.

a lot of places do this but it is against the law
...report them!!
your work place is helping the spread of deceases...if someone had a contagious decease or infection:
..a mouth ulcer,
..decease which travels into their saliva
..worms ...or just something generally nasty and contagious..then that will spread round like wild fire....
i cant stand sitting next to a stranger on the bus much less to drink their left over soup which they have probably sneezed in..oh my god i feel sick just thinking about it
..please report them and find a job somewhere else - oh where is this place you work at?
i want to avoid it like the plague - as i might end up catching the plague if i go there.

If this question is real, then why are you sitting here asking us our opinions. Use your own common sense and make an anonymous call to your local health department. Tell them exactly what is going on. And let us know what restaurant this is so we can stop going to it.

First question.
do you like your job?
second question
do you know the owner well enough to tell him and not loose your job?
third question
How would you fell if you knew someone got deathly sick from the soup?
forth question
WOULD YOU EAT THE SOUP KNOWING WHAT YOU KNOW????????
REPORT IT ASAP!
thats as bad as using toilet water to thin the soup out.

I would report this to your management or the Health Department. That can't be sanitary.
