Lots of liquid (try apple juice or better yet ... freshly squeezed apple cider) at about 250° for a long time. I cook it with onions, carrots, and potatoes with the vegetables added about 1 and a half hours before serving.

Brisket has a lot of fat and connective tissue in it. As a result, it is best when cooked at a relatively low temperature (200-250° F) for a long period of time. Brisket is the king of Texas BBQ as it is extremely well suited to smoking for 12 hours or more. If you don't have a smoker, a crock pot/roaster/cast iron dutch oven are all good cooking vessels. Cook it at low temperature for a long period, throw in some veggies near the end. Brisket is done when a fork can be inserted into the meat and twisted with little or no resistance.

Marinade your brisket in clauds and a can of coke overnight. bake at low heat for a long time. The longer it cooks the more tender it will be. Also trim as much fat off as possible. 325 deg. for 4 1/2 - 5 hrs depending on size. ENJOY!

Marinade overnight (at least 8 hours) in Claude's Brisket Marinade. Pour off most of the marinade. Put brisket and a bit of the marinade in a roaster (no rack), cover tightly with foil. Roast at 250 deg F for 6-8 hours.

There are many different ways. One is a 250 degree for about 4 or 5 hours, or 375 for about 2 hours. Here's something in between:
4 pounds beef brisket
1 onion, sliced
1/2 cup ketchup
1/2 cup chili sauce
2 tablespoons brown sugar
5 to 6 cloves garlic
1 (12-ounce) can beer
Season meat with salt and pepper and place in a 9 by 13-inch pan, and cover with onion. Combine ketchup, chili sauce, sugar, garlic and beer and pour over meat. Cover with foil and bake at 300 degrees for 4 hours. Remove foil and bake uncovered for 35 to 40 minutes. Remove meat from pan. To make gravy, with an immersion blender or a blender blend all liquid from the pan. Cook and stir until thick. Cool meat and slice cross-grain. Lay in baking dish and reheat. Serve with gravy.

no matter the weight, the slower you cook it and the lower the temp, the more tender it will be. that is a fact. 250-275 degrees for at least 4 hrs. depending on weight.
