how strong of a wind can blow over a tree? poplar trees snap at the top.. and spruce or pine go from the roots so.. the question is how strong of a wind gust can do the damage?

Depends on too many variables to give a definative answer.
How high of a tree? How healthy of a tree? What kind of ground is it rooted in? And so on and so on!

the range is huge. It will depend on the type of soil, how well the root system is established, how much foliage is on the tree, and the type of tree.
