Your use "all books have TEXT in them" is actually a later, derived meaning of the word.

Closer to the original meaning would be:
1. the main body of matter in a manuscript, book, newspaper, etc., as distinguished from notes, appendixes, headings, illustrations, etc.
2. the original words of an author or speaker, as opposed to a translation, paraphrase, commentary, or the like:

It is this sort of use that gave us "text-book". That is, such a book began by containing the original, authoritative text (writing)... which is what you would go back to as the basis of discussion.

If you wanted to properly understand the meaning of an author or of Scripture, you would go back to "the text", that is, the authoritative written down version of what they actually said or wrote.

This is one of the most cerebral questions asked on this site! I honestly don't know, but my guess is that the text in a textbook is of practical use whereas text in a novel or even a popular nonfiction book is not meant for utilitarian purposes. Thus emphasizing the Text over the entertainment value or the figurative Language or whatever.

Textbooks are obvious and boring, so your answer will evidently be obvious and boring: because they contain text. Sorry to disappoint ;) On the other hand though, literature is awesome.

I could be waaaay off here..but here's my thought:
A textbook is short for context book. The meaning of context is: the parts of a discourse that surround a word or passage and can throw light on its meaning

it is because all books have text and these text are found in the books...and combine them together-TEXTBOOK
