When an artist "covers" a song, it means that the song was originally done by someone else, and the "cover" is their version of it. For instance, a lot of people have done covers of the Beatles song "Yesterday".

Covers are songs performed by musicans than were played by previous muscians. The most popular cover is Jimi Hedrex's version of "All Along The Watchtower" by and performed by Bob Dylan.
Song writters can complicate things. Since neither of the Gershwin brothers performed their own songs, the songs they wrote aren't being covered by other artists. Now if an artist became well known with a Gershwin song, then it can be covered. For instance The Monkeys songs can be covered even though the songs were written by other people including Bob Dylan who didn't perform those songs on their own.

When a band records a song, a few years later another band may remake the old song. The song the other band records is called a "cover."
