any suggestions on what kind or type of thing i can create. has to be plant or animal

An interesting exercise would be to take a look at the tree of life as we understand it now, choose a node and then ask "what if" this taxon had not gone in this direction, or had not acquired this evolutionary novelty...
For instance...what if the first tetrapods had never acquired an amniotic egg? Would the descendant of those large extinct amphibians be alive now?
And what about a large predatory egg-laying mammal?

If no "biological plausibility" is necessary, then just let your imagination do the work... What about flying earthworms? submarine trees? miniature parasitic elephants? carnivorous ferns? a floating photosynthetic rat? singing fungi?

Don't forget to choose a good scientific name for it. I can help with some etymology if you tell us what type of organism it will be :-)

Imagine an ordinary animal, say, a sparrow. Now, trap a whole colony, say 1000 of them in a very large cave which has the entrance sealed by an earthquake. The light in the cave is very dim all the time. What changes would you see over several hundred generations in the sparrow. Any with good eyesight would obviously eat better and have more offspring, any that had more efficient use of their wings would use less energy and have more offspring. Any that were willing to try to vary their diet would also have an advantage. Over time, these differences would be more obvious from the original species. After many generations, they might look like a very large-eyed flat-winged, omnivorous bat-sparrow. It would still be a sparrow, but of different species.

Brine-tolerant nitrogen-fixing rice.
Yup. Take your ordinary rice, splice in whatever makes "salt grasses" grow, then add in genes from the nitrogen fixing bacteria that live with legumes. You'll have a crop that can be grown in salty water, that doesn't need nitrogen fertilizer. Double plus.
