Because we stupid

nah its because of our eyes.

Our eyes just aren't adapted to see those wavelengths. The sun radiates most energetically in visible light, so it is no accident that our eyes evolved to see in visible light. Anyway I believe you can see really high end infrared light if you hold an infrared filter in front of your eye. If you do that, take a look at plants, they look really funky.

Sunlight that makes it through the earth's atmosphere is mostly in the visible spectrum. There's a bit of UV and a lot of IR in sunlight too, but they don't transmit very well through water, which we (in particular our eyes) are primarily composed of.

Our eyes are not sensitive to those wavelengths is all. We can see things roughly from about 400 nm to about 700 nm. Anything else on either side is invisible to us.
