It stands for a strikeout, not a strike. I've heard that it originated in the 19th century, when scoring a game, the scorer kept track of the number of strikes by using the three lines that comprise the letter K. The third strike completed the "K", and was used to symbolize a strikeout in a scoresheet or scorebook. Not sure if this is legend or fact, but it does make sense.

S= Save
W= Win
L=Lose
K=StiKe out
BB=Base on Balls (walk)
ERA=Earned Run Average (for pitchers)
1B=single
2B=double
3B=triple
HR=HomeRun
BA=Batting Average
WHIP=Walks+Hits per Innings Pitched
OBP=On Base Percent
LOB=Left On Base
RISP=Runners In Scoring Position
RBI=Runs Batted In
E=Error
R=Runs
H=Hits
HBP=Hit By Pitch

K = strikeout. When scoring a baseball game a K is a strikeout swinging, while a backwards stands for a strikeout looking.
BB = walk, or Bases on Balls.
