It starts to resemble snowflake obsidian with white spots on the brown, or it becomes a pale brown instead of dark brown, or the oil/cocoa butter has sort of separated and it looks sort of greasy and dry at the same time.

Honestly, if you have to ask if it's to old, then it is already to late. Time to head to Sam's club and get that bulk package of Hersey bars and make all the bad things go away.
