Time is a man-made concept. It doesn't pass for anyone but humans - and even then, it only passes for those humans who know of it. It can no more be frozen or otherwise manipulated than a passing thought you can't recall or a dream you can't remember but know you had.
If there were a way to freeze time, I fear to think of the screeching sound it would make as it came to a halt. I wouldn't want to live through that.

I would probably take the infinite time, if it means I can go back and fix mistakes, now if I can't go back in time I would want to be a mortal because I don't like to hurt people and don't want to hurt more people

Define freeze time. If you've frozen time, there is no duration as you have no metric to measure it by (usually time). Therefore, to freeze time is meaningless, perhaps there are time freezes between every two moments. Your question has assumed that there as two axes that both measure time and it is as though you can freeze one while still using the other to measure duration. We discuss time as only one axis.
