Natural with Soya sauce, or cooked, baked... anyway...

Mako Shark Marsala
This is a great substitution for those, who don't like to eat veal. The
mako is so tender you probably won't need to use a knife.

4 mako shark steaks three quarters to one inch thick
3/4 teaspoon salt
1/2 teaspoon pepper
3 tablspoons flour
1/4 cup butter
1/2 cup dry marsala
1/2 cup water
1 tablspoon parsley, minced
Place shark slices on waxed paper and sprinkle with salt, pepper and flour.
Using a large skillet over medium heat, sauté shark slices about 2 minutes
each side until crusty and lightly browned. Transfer shark to a plate and
keep warm. Reduce heat to low and stir in Marsala and water. Return shark
to skillet and cover. Simmer approximately 15 minutes. Sprinkle with
parsley just before serving.
Serves four.

Deep water Garoupa (spotted ones), there are many kinds but those which are about 2 to 3 lbs are really tasty for just steamed and serve with good quality of soy sauce (Cantonese style). The huge ones (their skin are too thick that they are not suitable for steaming) are for braised and deep fried the fillets, Thai usually deep fried this the whole fish (2 lbs) and serve with spicy hot and sour sauce.

For salt water fish, grilled Red Snapper or a fresh stuffed Flounder. For fresh water you can't beat Walleye aka Pickerel.

Blue Grenadier (it is a white fleshed fish with absolutely no bones) from Australia and pink salmon is good baked with fish sauce and basil and giner and wrapped in foil.
